Homemade Granola

I recently posted about a granola bar recipe I tried, and last week I tried a granola recipe.  I’m determined to find something I can make that the kids like and I can send to school.  This recipe turned out much better than the one before!  The house smelled amazing while baking and it tastes SO good.  We’ve been eating it as a snack by itself – it’s that good – and making yogurt parfaits.  

I stumbled onto Monica’s recipe on her blog, and also consulted a great article about making granola which she linked in her post.  I sort of used info from both and created a recipe based on what ingredients I had.  

Here’s what I did:

3 c. oats (I used quick oats because that’s all I had at the time, but old-fashioned would be great)
3/4 c. sliced almonds
1/2 c. pecan pieces
uncooked quinoa – (I didn’t measure this and the next two ingredients, just poured until it looked about right)
flax seeds
chia seeds
1/4 c. maple syrup
1/4 c. honey
1/4 c. olive oil
1/4 tsp. sea salt
1 tsp. cinnamon
1 tsp. vanilla
1 beaten egg white

Combine ingredients and pour onto a greased cookie sheet.  Spread into a layer with spatula and do not mix during baking if wanting chunks of granola.  If you’d prefer loose granola, then stir once during baking.  Bake at 300 degrees for 30 minutes.  Cool in pan, then store in air-tight container.  

I’m looking forward to using the ideas in the article to mix up and change the recipe to try different granolas.  Anna’s classroom is nut-free so I’m hoping to make a version that she can take to school.  And, I’m hoping to still find a granola BAR recipe too.  

**A side note – in the picture you’ll see our yogurt in a tupperware container.  I recently discovered a way to cut down on the sugar in yogurt – buy a container each of flavored and plain yogurt, then mix together!  This isn’t my idea but I can’t believe I hadn’t thought of it before!  My kids did notice a difference in taste at first, but not enough to complain again or not eat it.  A win!
