This year, I was happy letting St. Patrick’s Day cruise by without much celebrating. Life is busy and actually it felt like “one more thing” this week. However, as I dropped James off at school Tuesday, he said, “Mom, are you making a St. Patrick’s Day meal tonight?” He seemed excited about it, so once we were home I pulled together a plan for a green meal.
Green scrambled eggs with chives, Ham, Green lemonade, Green kale smoothies, and Pistachio salad for dessert. Not too bad for last minute. Actually, it was fun and we all really enjoyed it. We talked a little about St. Patrick and his life evangelizing to pull it all together. Had I planned ahead a little, we could have made that the theme instead of the green food. Maybe next year. Then, the kids asked to watch the Dr. Seuss Green Eggs and Ham video before bed. Seemed appropriate!
That will teach me to let a holiday go by unnoticed in this house. I’ve got my kids trained well, I guess!
