Easy Pumpkin Muffins

20161031_133219-800x450A friend served these yummy muffins when Anna and I were over for a play date and I knew I wanted to try them.  They are not only super easy with few ingredients, but they’re also not overly sweet, which I love.  Nothing says fall like pumpkin!

Easy Pumpkin Muffins

1 package yellow cake mix
1 15oz. can pumpkin puree
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
Mini-chocolate chips (optional)

Preheat oven to 350 degrees.  Grease a 12 cup muffin pan or line with paper liners.  In a large bowl, mix together all ingredients until smooth.  Spoon equal amounts of batter into muffin cups.  Bake for 20 to 25 minutes, until a toothpick inserted in center comes out clean.

  1. Chocolate chips are not optional. Ha!

    I have a pumpkin choc chip muffin recipe I like, but this one is even easier by using a cake mix.
